Although snacking is sometimes thought of as a bad habit, if you think about it, that’s because most snacks are filled with carbs and sugar. You crave these foods because they stimulate you as they spike your blood sugar. When it drops, you crave more carbs for another spike. To break this vicious cycle, in the Skinny Gut Diet you will be eating frequently—snacks are absolutely necessary. Your snacks will always contain protein (at least 1 to 2 ounces), which will douse your carb cravings and help mold your skinny gut.
Stan’s favorite snack was quite a hit with the Skinny Gut Diet participants. He prepares what we call “roll-ups.” In fact, we don’t leave home without them. To make Stan’s roll-up, you simply layer a slice of deli meat, a slice of cheese, and a leaf of lettuce and roll it up. Wrap in a paper towel or wax paper and place three roll-ups in a baggie. They fit perfectly into the lunchbox. No matter where we go, there they are. Just peel back the paper and enjoy. (I have to fight my Cavalier Springer Spaniels for them!)
